Recipe for SPECULAAS

Ingredients:
- 250g flour
- 140g dark caster sugar
- 150g cold butter in pieces
- 2 teaspoon speculaaskruiden
- 1 teaspoon baking powder
- 4 tablespoons milk
- extra flour or rice flour

Preparation:
- Mix flour, baking powder, caster sugar and speculaaskruiden in a bowl.
- Add butter and then milk and knead until smooth.
- Let the dough stiffen in the refrigerator for a few hours (better yet 1 night).
- Using a brush, carefully dust the cavity in the speculaas board with flour. You will get an even better result with the slightly finer rice flour. Press the dough firmly into the shapes and cut away what sticks out above the board with a knife. Invert the board over a greased baking sheet and "pat" the speculoos out of the board.
- If you don't have a speculaas board: roll out the dough on a floured work surface to about 0.5 cm thick and make figures with a cookie cutter.
- Make sure the speculaas figures do not touch each other on the baking sheet.
- Bake the biscuits for about 15 min. in a preheated oven at 170°C.

For almond speculoos, add 50 g of shaved almonds to the dough.
